Synthesis of 2, 6-Deoxyfructosazine and its Decomposition of Incense Flavor in Tobacco Smoke

2, 6-Deoxyfructosazine (1) was synthesized from glucose and ammonium formate and isolated from the reaction mixture by membrane technology. The compound was characterized by HRMS, 1HNMR, and 13CNMR. Thermal analysis of the product showed that it began to decompose at 220 °C, and its weight loss was about 50 % at 320 °C. GC/MS analysis of the tobacco smoke showed that it decomposed to produce 2-methylpyrazine, 2, 6-dimethylpyrazine and 2-ethyl-6-methylpyrazine in the smoke upon smoking.
