Aiming at filtering refined microbial fermentation agent for rabbit meat, the reports are present as follows. 1 Materials and methods 1.1 Materials 1.1.1 Food and other raw materials Rabbit meat, pig fat, salt, sugar, glucose, white spirit, white pepper powder, five-spice powder, MSG, pork casings (diameter 35mm), bought from the market. 1.1.2 Medium Basal medium: MRS medium, artificial broth medium, rabbit meat extract medium[6].Mediums for characteristic tests: gas-producing glucose medium, mucus-producing medium, salt-tolerant test medium, nitrite-tolerent test medium, H2S-producing test medium, H2O2-producing test medium, ammonia-producing arginine test medium, biogenic-amine-producing measurement medium, litmus milk test medium, VP test medium[7]. 1.1.3 Reagents Chennai's reagent: A solution: KI 10.0g, HgI2 20.0g, distilled water 100mL; B solution: KOH 20.0g, distilled water 100mL; When cooled, mix A with B by ratio 1:1, then stored in brown reagent bottle.Developing solvents
