The objectives of this study were to determine the anthocyanins and phenolic contents in black soybean extracts with different defatted and to examine antioxidant activity of extracts against free-radical scavenging activity of ABTS and 1,1-diphenyl-2-picrylhydrazine(DPPH), ferric reducing antioxidant power (FRAP), superoxide anion radical scavenging activity, and in order to pick out black soybean high antioxidant activity and provide evidence for unveiling the antioxidant material basis of black soybean.

Small amounts of other oxides present in the raw materials constituting the ceramic shell (waste) and/or resulted from the thermal processing applied to the material (molten metal) can be evidenced (Table 1).
