Materials and methods
Sample preparation The experimental material consisted of grass carp (GC) and crisp grass carp at different crisping time (30d, 50d, 70d, 90d and 120d) and above samples were named as CGC1-CGC5, respectively.
There were much more interstitial materials (tissues) among intermyofibrils in CGC (Fig. 2B, 2C) than in GC (Fig. 2A).
