This paper used the take off plump fresh milk and soybean oligosaccharides as the main raw material production to make SBOS goat milk health ice cream., studied and improved were proceeded aimed at the status of nutrition, color, texture, organization, flavor and cost, view to develope welcomed health ice cream, provide theoretical basis and practical guidance for industrialized production and development of new products.
1 Materials and methods
1.1 Materials and reagents
Fresh milk, sugar, coconut oil, fresh eggs, are commercially available;Soybean oligosaccharide, CMC, sodium alginate, gelatin, guar gum, acacia gum, monoglycerides, sugar esters, soy lecithin, natural vanilla, shan remover are consumption level, provided by the changsha white bear food science and technology co., LTD.
1.2 Equipment
NDJ-75 continuous and agitation of ice cream machine, tianjin winters of food machinery co., LTD.D-30 m type high pressure homogenizer, American PhD technology co., LTD.
1.3.2.3 Hybrid materials Separate the sugar into duplicate, one is blending with stabilizer swelled by added to the50℃~60℃water and stirred,another mixed with fresh eggs and a moderate amount of milk then stirred to the gunk,a moderate amount of milk mixed with coconut oil, emulsifier; put the prepared raw materials mixed with water and the rest of the milk added to the pounding machine of high-speed, high-speed mixing under 45℃. 1.3.2.4 Sterilization The milk pasteurized with cold and hot cylinder under temperature 85 ℃, time of 15 min condition 1.3.2.5 Homogeneous Temperature of65℃~65℃, homogeneous pressure of 18 mpa, homogeneous cooling immediately after homogeneous. 1.3.2.6 Maturing matured in2℃~4℃refrigerator,Keep 4 ~ 6 h h, guarantee the raw material combined with moisture, goat milk, colloid closely. 1.3.2.7 Flavouring Natural vanilla flavor were added after Material liquid matured then fully mixed 30 minutes. 1.3.2.8 Condensation put the handled material liquid into
