Enzymatic degradation of guar gum Guar solutions (become gel at required high concentration) were prepared by adding 30 g polymer into 200 ml deionized water under vigorous stirring, if necessary, in order to disperse guar better, 20 ml absolute ethyl alcohol could be added into deionized water before adding guar.
Then, the polymer gel was sealed a container and placed in a 90 ℃ water bath for 2h.
Then, the polymer gel was added into 50 ml water under vigorous stirring, then an appropriate amount of β-1,4 mannanase was added under vigorous stirring, the pH of the guar solution was adjusted to 6 (optical pH for this mannanase, see fig.1) by adding hydrochloric acid, and the emzymatic degradation was carried out in a 50 ℃ (optical temperature for this mannanase, see fig.2) water bath.
(2) The intrinsic viscosity determination was performed in a water bath at 25℃.
