Abstract: In this study, we mixed peeled and grinded Juglans mandshurica nuts with milk, using Lactobacillus casei and Streptococcus thermophilus as culture, the ration is 1:1.
Materials Juglans mandshurica nuts, produced in Jilin Changbai Mountain; fresh; without oil spill; Fresh Milk, pH<18°T, the number of bacteria≤500,000 CFU • mL-1, total dry matter not less than 11.5%; Bacterial strains, Lactobacillus casei and Streptoccus thermophilus, and NaOH, NaHCO3, CaCl2, sucrose and1% phenolphthalein reagent stabilizer.
