In order to use yeast , several strains of high yield of ethanol Saccharomyces cerevisiae are separated through experimental, choosing one strain which has unique taste in fermentation, another strain has strong ability of alcohol tolerance, the two strain are used to make protoplasts, which lay the foundation for use the two yeasts in the further[2]. 1.material and method 1.1 material Strain: the yeast from isolation ,the NO. is T67, T13 .
