Materials and methods
2.1 Preparation of soy sauce samples
Three types of soy sauce, including (1) tradition soy sauce, (2) commercial red mold rice-incorporated soy sauce, and (3) lab-cultivated red mold rice-incorporated soy sauce, were prepared and used in this study.

To begin with we will provide a brief background of this subject.
1.1 Fractal growth
The fractal concept was formally introduced into the physical sciences by Mandelbrot in his monograph[1], which brought together mathematical, experimental, and physical arguments that undermined the traditional picture of the physical world.
Fractal theory derived as geometry[2], and now it is widely applied in fields like biology, materials science, computer graphics, etc..
