The water allows the pasting of starch granule to form a complex starch-protein network structure.
So it could be speculated that the network structure of protein-starch would be more solid after adding right amount of CSL-SSL.
And the pore structures of the dough during modulation and proofing after adding CSL-SSL were smoother than the control.

The Impact of Heat Treatment on Pyrophyllite Structure and Acid-soluble Properties

Abstract.
This paper studied the influence of heat treatment on the pyrophyllite structure and acid-soluble properties of alumina.
The results showed that at temperatures below 480 °C, the pyrophyllite did not change the basic structure. 480~700 °C dehydroxylation reaction occurred, and the structure water of pyrophyllite is removed, and then turned into partial pyrophyllite.
Crystal structure was a layer of aluminum hydroxide octahedron layer between two layers of silicon-oxygen tetrahedron layer, and formed a 2:1 layer structure.
Results and Discussion XRD The structure of the samples was investigated using XRD, and according to the diffraction data to identify the crystal structure.

The temperature dependence of the equilibrium constants Keq for Reaction (2) is found from the software HSC Chemistry 9®.
The continuous SiOx layer changes its shape to the bead structures.
Nanowires generated below 1500°C in experiments by Liu et al., whereas silica melts at 1710°C, according to HSC Chemistry 9®.
SEM analyses show that the continuous layer structure is preferred below 1200-1250°C, while the bead structure is often found above this temperature interval.
The chemistry and thermodynamics of this mechanism will be covered in a future work [28].
