Microwave-assisted extraction (MAE) has been widely applied for obtaining bioactive compounds from various food materials such as pulp, herbs, leaves, and peels [1-3].
In this study, extraction of anthocyanin content from Violet glutinous rice grown using fresh materials, extraction by MAE and RSM with a test design model process were performed to optimize the extraction processes.
Data in Table 2 shows that all linear components in the extraction process using microwaves were significant (p <0.05), in which microwave power had the strongest impact on extraction efficiency anthocyanin, followed by the ratio of raw materials/solvents and time.
