The reduction of water
content of samples contributes to preserve the raw matter preventing the degradation during storage
and transportation.
Moreover, drying reduces the transport cost and avoid the interference of water on the subsequent extraction process decreasing the need for solvent [6].
The convective air drying is one of the most used techniques to reduce the water content of food [7].
For that purpose, the Generalized Reduced Gradient (GRG) optimization method, available in the Microsoft Excel spreadsheet from Microsoft Office XP Professional, was used.
The initial moisture content of samples was 0.482±0.006 kg water/kg dry matter.
