The main objective of this study was to discover the water distribution in the meat at different time postmortem, discuss the probable reason for meat frozen at different time postmortem formed ice fibres with different size, shape and location during the same freezing conditions and hope to give some useful data for using NMR to forecast the aptness for freezing of pork.
