Study on Separation of 11S and 7S Fractions from Soy Protein by Different Techniques

Abstract:

This experiment material was the Northeast Agriculture-42 soybean, the conditions for extraction and separation of 11S and 7S fractions from soy protein were optimized. The factors affecting extraction effect,including extraction solution, extraction time, kinds and dosages of sediment, and the pH conditions were improved, and optimization of separation method of 7S and 11S in soy protein with orthogonal test. This results shown that: 11S globulin in extraction time 120 min, CaCl2 precipitation agent concentration 30 mmol / L, acid sinking pH 6.2, and yield was 81.3 %; 7S globulin in extraction time 90 min, CaCl2 precipitation agent concentration 10 mmol/L , acid sinking pH 6.2, and yield was 86.9 %.This research was the actual production of 7S and 11S in soy protein provides theory basis.
