Preparation of flour from JSS used a modified method of Tulyathan et al., (2002) [6] and Mukprasit and Sajjaanantakul (2004), [7].

The total lipid content was 14.65%, a value that is higher than other shrimp varieties reported by Andrea et al. [23].
